Our Palouse Label was inspired by those rolling green and golden hills in eastern Washington; waves of wheat, lentils, garbanzo beans, and canola stretching to the horizon. It’s a quiet nod one to of our largest farming regions.

From Chiapas With Heart

Our Palouse coffee comes from Café Sierra Azul, a cooperative of nearly 300 smallholder farmers living within the El Triunfo Biosphere Reserve in Chiapas, Mexico. Founded in 2010 by the children of producers, this group was built on one simple but powerful idea: create sustainable livelihoods at home, without having to leave for opportunity elsewhere.

This women-produced lot reflects that spirit; strong roots, community pride, and forward momentum.

• Elevation: 1200–1900 MASL

• Process: Washed

• Cultivars: Typica, Bourbon, Mundo Novo & Geisha

High elevation growing conditions slow maturation, building natural sweetness and structure. The washed process keeps the cup clean and beautifully defined.

Flavor Profile: Structured, Sweet & Comforting

Roasted to a balanced medium, Palouse deepens into a cup that feels like golden hour over rolling hills.

Expect notes of:

As part of our Coffee with a Cause commitment, 1% of sales from this coffee are donated to the National Young Farmers Coalition, an organization working to empower young and beginning farmers across the United States.

Just like the cooperative members in Chiapas who built sustainable opportunity in their own community, National Young Farmers Coalition members are fighting for fair access to land, climate resilience, and a stronger agricultural future.

From the rolling hills of the Palouse to the mountains of Mexico, this coffee honors farmers everywhere.

🌎 Roasted With Zero Carbon Emissions

Palouse is roasted on our Bellwether Roaster, an all-electric roasting system designed to eliminate direct carbon emissions. Unlike traditional gas-powered roasters, the Bellwether produces zero on-site carbon emissions, meaning your coffee is crafted with dramatically reduced environmental impact.

When you’re working with organic, single-origin coffee grown inside a protected biosphere reserve, the roasting process should honor that same stewardship. Clean energy roasting allows us to preserve flavor while protecting the air we all share, from the Palouse hills to the mountains of Chiapas.

Her work captures the soft rolling hills, layered fields, and golden light that define the Palouse, while weaving in that quiet, adventurous gnome spirit we love so much.

It’s more than a landscape; it’s a tribute to farmers, to stewardship of the land, and to the connection between agricultural communities from Washington State to Chiapas, Mexico.
